Gazpacho Style Cucumber Soup





Ingredients

  • 4 or 5 cucumbers

  • 1 small white onion

  • 3 or 4 cloves of garlic, minced

  • 100ml olive oil + more to serve

  • bunch of dill, to taste

  • 6tsp sherry vinegar or to taste

  • 50g ground almonds

  • juice of 1 lemon

  • salt & pepper


Method

  1. Peel your cucumbers and chop them up into about 1 inch pieces. Put them all in a blender and blitz until all pieces are broken down.

  2. Chop the onion and add to the blender along with the minced garlic, olive oil, dill, vinegar and lemon juice.

  3. Season with salt & pepper and taste. If necessary add more lemon, vinegar, garlic, dill, salt etc. until it suits your taste.

  4. Serve up straight away with extra olive oil, dill & chilli flakes or keep in the fridge to let the flavours infuse. I left mine overnight and it was delicious!
