I absolutely love making these raw nut & fruit balls. They're such a great snack for a small hit of protein and to satisfy your sugar craving naturally!
I like to use dates or dried figs and any nuts of your choice will do. I love adding spices to mine to make them full of flavour and it helps to include wider nutrient content- cardamom and cinnamon are my favourites. You could also add a small amount of cocoa powder or cocoa nibs for added antioxidants and polyphenols, great for gut health.
Recipe
100g desiccated coconut
100g ground almonds
8 x dates (pitted)
1tbsp almond butter
3tsp orange extract
zest of 1 organic orange
Method
Place all the ingredients into a blender and blend until everything is fully combined and a sticky dough forms. If you are using whole almonds instead of ground ones, put them in first on their own and blend until broken down.
Shape the mix into balls with your hand and store them in the fridge until you want to eat them!
